John's Power Cookies

Beat the following ingredients with an electric mixer:

  • 1 ripe banana (mashed)
  • 1 cup fat-free regular yogurt
  • 1 cup unsweetened applesauce
  • ½ cup Splenda or sugar if prefer
  • ¼ cup brown sugar (optional)
  • 3 tablespoons molasses
  • 3 eggs
  • 3 teaspoons vanilla

Mix in the following dry ingredients with an electric mixer until entirely moist:

  • 2 cups all-purpose unbleached flour
  • 1 1/2 cups whole wheat flour
  • 2 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Stir in remaining ingredients with a strong utensil:

  • 2 cups quick oats
  • ½ cup all-brand cereal
  • ½ cup grape nuts
  • ¼ cup wheat germ
  • ¼ cup oat or wheat bran
  • ¼ cup milled flax seed
  • ¾ cup chopped walnuts
  • 1 cup raisins
  • ¾ cup chocolate chips (optional, but tasty)

If you do not want some of these dry ingredients, they can be optional. If you need more moisture, add a little more applesauce until correct consistency. You may use a large spoon to place dough on a cookie sheet. Flatten dough to about ¾ inch thick and a diameter of about 2 ½ inches. Bake at 350 degrees for about 15 minutes until browned on the bottom. Cool on a cooling rack.

This recipe will make about 45 cookies. They keep frozen very well. Take a few with you during your long day for needed and healthy snacks. Enjoy!
